Bean Salsa

1 can Black eyed peas1 can Black beans1 can pinto beans1 can garbanzo beans1 small jar Pimentos--chopped1 Can White cornDrain all of the above, and rinse beans. Put into lage bowl.Add 1 Cup Green pepper chopped.1 medium Onion Chopped.Set aside.Boil the following:1 Cup oil3/4 Cup Cider Vinegar1 TBSP water1 tsp Salt1/2 tsp Pepper1 Cup SugarBring to boil and our over bean mixture. Refrigerate till cold. Drain liquid prior to serving.
I guessing that it makes 20 1/2 cup servings....I have never counted it.
Great addition to a salad as a dressing substitute.
