Mediterranean Couscous Entree

1 cup couscous, uncookedChickpeas (garbanzo beans), 1 cup Onions, raw, 0.5 cup, chopped Peppers, sweet, red, raw, sliced, 0.5 cup Black Olives, canned 15 small Zucchini, baby, 1 large, slicedYellow Squash, 1 cup, sliced Chicken bouillon, 1 cube crumbledGround Cumin seed, 0.5 tspPepper, black, 0.5 tsp Saffron, 0.25 tsp Olive Oil, 1.5 tbsp Almonds, toasted, 0.25 cup
Cook couscous according to package directions.
Toast almonds to crisp them
Saute onion and pepper the oil in a large skillet.
Add cumin, remaining vegetables, crumbled bouillon and chickpeas. Saute lightly to keep the veggies crisp.
Stir to combine.
Add Cousous and lightly stir to mix. Sprinkle on toasted almonds and serve.
