Mushroom & Spinach Quiche

3 cups nonfat milk6 large eggs8 oz. Swiss cheese, shredded or sliced.5 tsp black pepper.5 tsp salt.5 tsp nutmeg1 cup fresh mushrooms, sliced1.5 cups fresh spinach, chopped2 9" deep dish ready to bake pie crusts
- Scald 3 cups of milk.
- Mix the eggs, pepper, salt, and nutmeg in a bowl.
- Place half of the spinach, mushrooms, and cheese in each pie crust.
- Slowly mix the milk into the egg mixture.
- Pour the milk and eggs into the crusts.
- Bake at 450 for 10 minutes.
- Bake at 350 for an additional 20 minutes or until firm.
- Cool for a few minutes before cutting to solidify.
- Cut each pie into 8 pieces.
- Enjoy with a tossed salad! : )
