Papaya, Grapefruit & Avocado Salad with Grilled Shrimp

Ingredients
Salad:- 1c Romaine Lettuce, chopped- 1c Collard Greens, chopped- 1/4 of an Avocado, peeled, pitted and sliced- 1/2 c Grapefruit sections- 1/2 c Papaya chunks- 100 g Shrimp, to grill with salt and pepper- 1/2 tbsp Blue Cheese CrumbleDressing:- 1 fl oz Grapefruit Juice remains- 0.25 tbsp Extra Virgin Olive Oil- 0.25 tbsp Honey- 1 tbsp Apple Cider Vinegar- 0.25 tbsp Ground Ginger
Directions
Whisk together reserved grapefruit juice, oil, vinegar, ginger and honey to make a dressing. In a large bowl, toss the greens with enough of the dressing to coat them. Arrange grapefruit, papaya and avocado atop the greens. Season shrimp with salt and pepper, grill, and add atop the salad! Drizzle with remaining dressing and eat up!

Serving Size: makes one big salad!
