Ingredients
2 eggs5 egg whites2-3 tbsp water1.5 oz cooked pork sausage (crumbled)2 large mushrooms, sauted (about 3 oz)3 oz baked potato, chopped
Directions
Spray a muffin pan lightly with cooking spray. I used a 6 section "muffin top" pan. You can also use a regular muffin pan (this would probably make 8 or 10 regular muffin size) or an 8X8 baking dish (cut into 6 servings).
Place egg and egg white in a bowl. Add chopped chives, water, oregano, salt and pepper. Whisk until blended. Add in cooked mushrooms and sausage.
Place about 1/2 oz potato pieces in the bottom of each tin section or line the bottom of your baking dish.
Pour the egg mixture into your tins.
Bake for aprox. 15 minutes at 350 degrees.
