Ingredients
Directions
Pinto Beans 1 cup dry or 1 15 oz canBrown Rice 1/2 uncookedTomatoOnions 1/2 cup chopped2 Tablespoon fresh Parsley1 Tablespoon Olive Oil1/4 lemon juice1 or 2 cloves of garlic
Combine following ingredients in mixing bowl
2 cups cooked beans or 1 15 oz can of beams
1 1/2 cup cooked brown rice
1/2 cup finley chopped onions
1 tomato diced
2 Tablespoons of fresh parsley
Mix together
1/4 cup lemon Juice
1 Tablespoon Olive Oil
1-2 cloves garlic--crushed
Pour over salad . Toss gently
Chill for 1 to 2 hours
Serving Size: makes 10 1/2 cup servings
