Kale & Fruit Salad

Ingredients
4 cups Kale, roughly chopped1/2 cup dried fruit without added sugar1/2 cup diced apple1/4 cup sliced almondsDressingJuice from 1 orange - ~1/2 cup2 Tbsp Lemon Juice2 Tbsp olive oil3 tsp grated ginger
Directions
Wash and dry kale
Tear into bite size pieces
Place kale in a bowl
Make Dressing
Mix juices, add olive oil and whisk. Add ginger and pour over Kale. Massage dressing into kale for one minutes. Add dried fruit and let stand for at least 10 minutes.

You can do this and let it set over night in the fridge if you want. It only gets better the longer is sets in the dressing.

When you are ready to serve add the apple and the almonds.
