Congressional White Bean Soup

Ingredients
8 cups water1 lb. dried small white beans2 cups low fat ham1 cup finely chopped celery1 cup finely chopped onion2 tablespoons finely chopped fresh parsley1/4 teaspoon black pepper1 bay leaf
Directions
Makes 6-8 servings (recipe is calculated for 8 servings)

In a large pan, bring water to a boil. Add beans and boil gently 2 minutes. Turn off heat and let stand 1 hour. Pour into a slow cooker. Add remaining ingredients. Cover and cook on LOW 12 to 14 hours or until beans are soft. Remove bay leaf.
