Guilt-Free Eggplant Marinara

Ingredients
1 eggplant1 tsp salt 1tbsp olive oil 2 cloves garlic, minced 2 T fresh oregano,chopped1 medium onion, chopped1 red bell pepper, chopped1 lg can whole peeled tomatoes1/2 cup grated part-skim mozzarella cheesesalt and pepper to taste
Directions
Slice eggplant. Sprinkle salt over each slice let sit for at least 30 minutes, then rinse and gently pat dry. Saute onions and peppers in 2 tsp olive oil for 10 minutes, stirring frequently. Add salt, pepper, and garlic the last minute of cooking, making sure the garlic doesn't burn. Add oregano and stir. Pre-heat oven to 350 degrees. Brush olive oil over eggplant and saute for three minutes each side. Spray Pam in baking dish. Line dish with eggplant. Top with veggie mixture. Smash tomatoes in your hand and place on top of the veggie mixture. Lastly, top with mozzarella. Cover tightly with foil and bake for 45 minutes. Remove foil and bake for an additional 5 minutes to brown the cheese.
