Maple Boneless Pork Roast (slow cooker)

Ingredients
2 lbs (1 kg) boneless pork roastSalt and pepper1/2 cp (125 ml) maple syrup3 tsp (15 ml) Dijon mustard4 tbsp (60 ml) brown sugar
Directions
This recipe is for a slow cooker with a temperature probe. Place roast in slow cooker. Season with salt and pepper. Pour 1/2 cup (125 ml) maple syrup over pork. Spread top of roast with 3 teaspoons (45 ml) of Dijon mustard. Top with brown sugar. Cover, insert probe and cook to desired temperature (160 degrees F- about 3-4 hours).
