Mock English Muffins

2 cups whole wheat flour1 cup soy flour4 TBS milled flax seed4 tsp baking powder2 egg whites3/4 cup sour creamwater, if needed
Combine eggs whites and sour cream in a bowl. Sift flours, baking powder, and flax seed together and stir into sour cream and egg mixture. If dough is too stiff, add cold water, a little bit at a time.
Allow dough to rest for about 15 minutes. The dough can either be rolled out and cut or shapped by hand. Make about 1/2 inch thick and about 4 inches in diameter. Place 2 pieces of dough on top of each other on a non-stick or sprayed cookie sheet. (This makes them easier to split). Bake at 400 degrees for about 15-18 minutes.
For variety you can add cinnamon and raisins, grated cheese, or a little brown sugar or honey tor a sweeter bun. May be frozen and toasted. Also great for sandwiches and with dinner in place of bread or rolls.
