Tapioca-Brown Rice Pudding

Ingredients
1/3 cup sugar3 tablespoons MinuteŽ Tapioca3-1/4 cups 2% milk, divided (2-3/4 cups and 1/2 cup)1/2 cup cooked brown rice 1 egg, well beaten1/2 teaspoon cardamom1 tsp. vanilla extract
Directions
In a medium sauce pan, mix sugar, tapioca, milk and egg; let stand 5 minutes.

Meanwhile, put rice and 1/2 cup milk in a blender or food processor, pulse 3-4 times. Add to sauce pan and stir in cardamom.

Cook on medium heat, stirring constantly, until mixture comes to a full boil. Remove from heat and stir in vanilla.

Cool for 20 minutes and stir. Serve warm, or chill before serving.
