Ingredients
1.5 cups Sweet Potato1 cup Onion 1 cup Red Bell Pepper2 Cloves Garlic2 Jalapeno Peppers (seeded)12 oz Chicken Breast (pre-cooked / chopped)1 cup diced tomatoes8 cups fat free chicken broth1/4 cup Brown or Wild Rice1 can drained Black Beans1t Cumin1/2 t Cayenne pepper1/3 cup creamy Peanut Butter1T olive oil
Directions
Place a large with olive oil over medium heat until warm.

Add sweet potato, onion, bell pepper, garlic, and jalapeño; sauté 5 minutes.

Stir in chicken and next 7 ingredients (chicken through cayenne); bring to a boil. Reduce heat; simmer 20 minutes.

Add peanut butter, stirring with a whisk; cook 2 minutes.

    delicious flavor! This is really easy pretty quick. It also keeps well. I used more sweet potato than called for (about 2 whole), and used a less spicy pepper (not jalepeno.) I also got fresh chicken, diced it up, and cooked it quickly in a non-stick pan before adding it. The rice goes in uncooked. - 12/4/07
