Chedder Cheese Soup

2 tsp canola or olive oil1/2 cup red onion chopped3tbsp flour2 cups fat free, low sodium chicken broth1 1/2 cups fat free milk8oz 2% shredded sharp cheddar cheesesalt and pepper to taste
heat oil in a large saucepan over medium high heat, add onions and cook untill soft. Add flour and stir to coat. Add broth and bring to a boil stirring frequently. Reduce head and simmer 2-5 minutes until soup thickens. Add milk and return to a boil stirring constantly.
Turn heat off and using either a blender or a hand blender puree soup then return to a boil. Turn off heat add cheese and stir untill smooth.
Note: fat free cheese will not melt and will ruin the soup. I also add a sprig of rosemary when i am cooking the onions and remove it before i puree. It just depends on what you like
