Fresh Corn Salsa

3 cups corn kernels Frozen is fine2 vine ripened tomatoes, diced1 red onion, diced1 red pepper, diced2 jalapeņos, seeded and diced2 avocados, medium, diced1/4 cup cilantro, finely chopped1/4 cup fresh lime juiceSalt to taste
Allow corn kernels to thaw, if using frozen. Combine corn, onion, tomato, bell pepper, and cilantro, in large, non-reactive bowl. Glass is best. Clean the seeds and membrane out of the jalapeņo. You may leave some seeds in the peppers to make the salsa hotter to taste. Fold into the bowl. Toss the diced avocado and lime juice together to prevent avocado from oxidizing. Fold into the large bowl. Generously season with salt to taste.
Can be served immediately, but allowing a few hours in the refrigerator for the flavors to meld is best.
Serve on top of fish or chicken, or with tortilla chips. Can be served by itself as a side dish.
