7 Layer Rainbow Finger Jello

Ingredients
4 (3 oz.) pkg. Jello (strawberry, lemon, orange, lime or any other combination)6 pkg. Knox unflavored gelatin1 (13 oz.) can evaporated milk6 tbsp. water2/3 c. sugar5 c. water
Directions
JELLO LAYERS: Soften one package unflavored gelatin in 1/4 cup cold water. Add Jello and 3/4 cup hot water. Stir until dissolved. Repeat this process for each flavored layer.

MILK LAYERS: Combine 6 tablespoons water with 2/3 cup sugar. Heat until sugar is dissolved. Add evaporated milk. In another bowl, soften 2 packages unflavored gelatin in 1/2 cup cold water. Dissolve in 1/2 cup hot water. Combine with milk mixture. Keep bowl in warm water or on a pilot. Use 1 cup for each layer.

PROCEDURE: Prepare strawberry Jello with unflavored gelatin and water. Pour into 13 x 9 x 2 inch pan. Set in refrigerator for 20 minutes. (Prepare next Jello layer and allow to cool.) Use 1 cup milk mixture for next layer, 20 minutes to set. Repeat Jello layer, milk layer, Jello layer, milk layer, Jello layer. Cut to desired size. Serve as a finger food or a dessert. Will remaining firm for 3-4 hours at room temperature. TIP: Be sure that refrigerator shelf is level. Use Pyrex glass pan if possible.

    I have made a slight variation of this recipe for years and everyone loves it. I use regular cream instead of evaporated milk and I don't sweeten it. The sweetness of the jello is enough. - 12/7/10

    We eat this alot in Hawaii...great party dessert. It is colorful and hits the sweet spot. I personally use coconut milk instead of the evaporated milk and therefore, no sugar. Others use condensed milk, again with no sugar. It sounds hard, but its not....just time consuming, but worth it!!!!!! - 6/22/08
