Refrigerator Bran Muffins from "More with Less" Cookbook

Ingredients
Place in bowl: 2 cup ready to eat bran cerealPour over: 2 cup boiling waterSet aside to coolCream together in large mixing bowl: 1 cup shortening or margarine 1.5 cups sugar 4 eggsAdd and beat in: 1 qt. buttermilk soaked bran mixtureSift together 5 cups of flour 5 tsp. soda 1 tsp. saltAdd dry ingredients to creamed mixture and fold until flour is moistened.Fold in: 4 cups additional dry bran cerealStore batter in covered containers in refrigerator. Keeps 3-4 weeks. When ready to bake, preheat oven to 400 degrees and fill well-greased muffin tins 2/3 full. Bake 20 minutes.
