4 plum tomatoes - cored and pulp set aside1 glove garlic3 TBS pine nuts4 TBS parmesan cheese, grated1 TBS Olive Oil1 TBS Fresh Parsley1 TBS Fresh OreganoSalt and Pepper to taste
Core tomatoes and set aside pulp. Place garlic clove and pine nuts in food processor. Blend until pine nuts are wellg round. Add the tomato pulp, parmesan cheese, olive oil, parsley, oregano and S & P and mix well. Spoon filling into cored tomatos and place in a pan with a small amount of olive oil on the bottom. Coat the bottom of each tomato. Place a pre-heated grill or 350 degree oven. Grill with lid closed, checking after 5 minutes. Turn grill down to create an indirect heat and cook until cheese is melted and skin of tomato is soft. Oven will take longer, approximately 20 minutes.
