purple eggplant, oinions, garlic, mushroom and home made tomate sauce (tomatoes, onions, garlic, green and red pepper also a sprinkle of sugar)
cook onions and garlic in olive oil. Add sliced purple eggplant, and cut up mushrooms. Cook for 5 - 10 minutes then add tomatoe sacue (home made) and it tastes better if you add some cheese on top. (I added slice of 0 fat cheese)
