Individual Ham Mushroom Spinach Frittata

Ingredients
1 cup chopped Super lean Black Forest Ham2 garlic Cloves - finely chopped3 eggs 4 egg whites 1/2 cup Mozzarella Cheese1 cup mushrooms chopped1/2 cup onions chopped2 tbsp Fresh Basil Chopped1.5 cups 1% Milk1/4 cup All Purpose Flour2 cups Chopped Spinach
Directions
Saute ham, onions, garlic and mushrooms until tender. Allow to cool.

In a large bowl, whisk flour and milk until smooth, whisk in eggs and egg whites until blended, Add cheese, basil, salt and pepper to taste and ham mixture.

Coat either a 6 large muffin pan or 12 muffin pan with cooking spray. Fill halfway with egg mixture, add spinach and top with egg mixture. Bake at 350 degrees for 25-30 minutes, until center comes out clean. Carefully remove from pan with small spatula and serve warm.
