Eggplant Mexican Black Bean Soup

Ingredients
I medium eggplant1 clove garlic1 med onion1 15oz can Hunts diced tomatoes w/green chilis1 28oz can Hunts diced tomatoes2 cans Ortega green chilis2 c black beans cooked1/3 c reduced fat sour cremeOlive Oil, 3 tbsp1 1/2 pkg Taco seasoning
Directions
Saute garlic and onion in olive oil.
Add Eggplant and cook till tender.. 5-8 min
Add tomatoes, green chilis, cooked black beans & Taco seasoning. Stir and simmer for 15 min.
Stir in sour creme right before serving
