Yellow Split Pea and Ham Soup

Ingredients
1 Tbsp. Olive Oil1 Medium Onion, Chopped3/4 Cup Celery, Chopped Small3/4 Cup Carrots, Chopped Small1 Clove Garlic, Minced1 Bay Leaf1/2 Tsp. Dried Thyme1-16oz. Bag Dried Yellow Split Peas, Sorted and Rinsed6 Cups Chicken Stock (or 6 Cups water with Low Sodium Soup Base/Boullion to reduce salt content)Salt and Fresh Ground Black Pepper to taste3/4 Cup Chopped Ham
Directions
1. Heat oil in 4 Qt. soup pot, add onions and cook until translucent.

2. Add garlic, celery and carrots, cook for 5 minutes more.

3. Add bay leaf and thyme, cook until fragrant.

4. Add split peas, stock and salt and pepper. Bring to a boil, reduce heat and simmer (covered) for about 1 hour stirring occasionally.

5. Add ham to the soup and cook for another 20 minutes or so, until the peas have broken down and the soup has thickened.

Serving Size: Makes about 10-1cup Servings
