Mandarin Orange Salad Dressing

Ingredients
2 tbs evoo1 tbs rice wine vinegar2 tsp of grainy dijon mustard1 small can of mandarin oranges in light syrup1 package low calorie sweetener
Directions
Drain the oranges with a strainer but keep a little bit of the juice to add to the mixture. Wisk the oil, vinegar, mustard, and sweetener. Add the oranges to the salad. Spring mix works well as does baby spinach.
