Jenha's Zesty Red Lentil Pilaf

- 1 cup onion, chopped- 1 clove garlic, minced- 1 tbsp margarine- 1 cup Uncle Ben's Natural Select Roasted Red Pepper rice- 1/2 cup red lentils, rinsed- 1 cup Aylmer Spicy Red Pepper diced tomatoes- 1/2 tsp Frank's Red Hot sauce- 1 tsp dried thyme leaves- 3 cups water
1. Saute onion and garlic in margarine until soft.
2. Add rice, rinsed lentils and diced tomatoes in their juice.
3. Add hot sauce, dried thyme leaves and water.
4. Bring to a boil, cover and reduce heat. Simmer for 12-15 minutes.
For more heat add additional hot sauce, to desired taste.
Serving Size: Makes 6 1/2 cup servings
