Spanish Chicken

Ingredients
1 onion - medium diced1 garlic clove - minced1 Tbsp Extra Virgin Olive Oil2 Cans chopped tomatoes1 Tbsp tomato puree ( tomato paste)2 Tbsp Red Wine ( more or less to ones own taste)Sea Salt - small pinchGround Black pepper - to your own taste1/2 tsp. Coriander - dried1/2 tsp. thyme - dried1/2 tsp. mixed herbs - driedBell Peppers ( 1 red & 1 green) sliced or diced4 Chicken Breasts - No skin or bones
Directions
Place Extra Virgin Olive Oil into a pan and add onion, saute add minced garlic and peppers stir very well. Add the chopped tomatoes and tomato puree and wine mix well. Add seasonings and mix well.
Slice Chicken on thicker side but not all the way through. Place into sauce and cover with a heavy lid on top of chicken. Cook for 12 minutes on side then turn and cook remaining time or until cooked throughout.
Serve with sauce over Chicken.
