MaryK's Mock Potato Salad

Ingredients
* Cauliflower, raw, 1 head, medium (5-6" dia) cut into small pieces* Dill Pickle juice, 4 tbsp* Onions, raw, 1/2 medium (2-1/2" dia) finely chopped* Green Peppers (bell peppers), 0.5 cup, finely chopped* Celery, raw, 2 stalk, large (11"-12" long) finely chopped* Daisy Light Sour Cream, 2 tbsp* Helman's Light Mayo, 2 tbsp * Kraft Miracle Whip Light Dressing, 2 tbsp
Directions
Cut cauliflower into small pieces cover with water and boil until tender. (about 10 minutes). Drain cauliflower and pour 4 tbls. of dill pickle juice and refrigerate until it is cold. You can make this a day ahead.

Finely chop onion, pepper and celery. Add to cauliflower.

In a small bowl mix 2 tablespoons each of light sour cream, Helman's Light Mayo and Miracle Whip.

Fold dressing into veggie mixture. Best if made a few hours before eating.
