Mushroom Miso Soup

Ingredients
4 cups vegetable stock2 tsp grated fresh ginger1 clove of garlic (finely chopped)1 tsp Asian style chili sauce6 – 8 shiitake mushrooms, thinly sliced (stems removed)½ lb oyster mushrooms (thinly sliced)3 tbsp white miso½ cup brown mushrooms, thinly sliced (stems removed)2 green onions, finely chopped
Directions
Makes 4 servings

Combine the stock, ginger, garlic and chili sauce in a soup pot. Bring to a simmer. Add the mushrooms and simmer until just tender, about 3 – 4 minutes. Stir in miso until it dissolves. Stir in the green onions and heat for about 1 minutes. Ladle the soup into bowls and serve with brown rice and green tea.
