Chicken Spinach Soup with Rice

Ingredients
Ingredients:Olive Oil, 2 tbsp Onions, raw, 1 cup, choppedGarlic, 4 cloves, minced Carrots, raw, 1 cup, chopped Chicken Broth, 64 fl oz Chicken Breast, raw, diced,16 ounces *Lundberg Wild Blend Brown Rice-1/2 cup dry or 1 pkg Mahatma White & Wild riceSpinach, fresh, chopped 6 cups*ITALIAN SEASONING, 1 1/2 tsp.*MORTON Sea Salt, 2 tsp.*Black Pepper, freshly ground, 1/2 tsp
Directions
In large stockpot, cook onion, garlic, and carrots until tender. Add Italian seasoning. Add salt and pepper. Pour in broth. Bring to a boil. Add chopped chicken, spinach, and rice. Stir for a minute or two. Bring to a simmer again. Cover, and cook for 20 to 25 minutes, stirring occasionally.
