Peanut Butter Banana Oat Muffins

1 medium Banana, mashed2 tbs non-fat plain greek yogurt3/8 cup of Stevia zero-calorie sweetener (1/4 cup plus 1/8 cup)1 large egg1/2 c skim milk3 tbs All Natural Creamy Peanut Butter3/4 c whole wheat flour1/2 c quick cooking oats1/4 tsp salt1/2 tsp baking powder1/4 tsp baking soda1/2 tsp cinnamon
Preheat oven to 375 degrees.
Line a muffin tin with paper or foil liners.
Mix banana, yogurt, stevia, egg, milk, and peanut butter with a mixer. Blend well, until completely smooth
Mix remaining ingredients in a separate bowl. Fold these ingredients into wet mixture, and mix well until no streaks of flour remain.
Pour batter into the lined muffin tin, filling almost to the top.
Bake for 16-20 minutes, until a toothpick inserted into the muffins comes out clean.
Let cool slightly before serving
