Gluten Free Crepes

Ingredients

1/3 cup teff flour1/3 cup all purpose gluten free flour1 1/5 cups milk3 eggs1 tsp salt2 Tbsps melted butter or oil
Mix all ingredients well. Let stand 20 minutes before cooking.
Preheat a skillet, preferably cast iron at medium high heat. Lightly oil the skillet then ladle about 1/2 cup of batter on the hot pan using the back of the ladle to spread out thinly. When underside is starting to brown and top is dried out some, flip over and cook 30 to 40 seconds or so. Can be folded and served with fruit preserves, syrup or jam.
For filled crepe, flip over, fill with desired fillings and then fold. Serve hot.
Serving Size: Makes 6 - 8 inch crepes
