spicy Portuguese kale and white bean soup

4 cups chopped fresh kale6 cups vegetable broth1 16 oz can white beans (I used navy beans) 1/2 cup chopped onion3 cloves garlic, minced1.5 T olive oil1/4 tsp red pepper flakes1 bay leaf1/4 tsp died marjoram, or 1 tsp chopped fresh marjoramsalt and pepper to taste1/4 cup chopped fresh Italian flat leaf parsley
saute garlic and onion in olive oil over med/low heat about 3 minutes. add garlic to crock pot along with vegetable broth, kale, bay leaf, red pepper flakes, and marjoram. set crock pot to cook on high for 4 hrs or low for 8 hrs. when done, add parsley and salt and pepper to taste. tastes great paired with a salad and warm crusty bread for a light dinner
