Leek and potato salad

Ingredients
1 leek2 medium, firm white potatoes1 tsp olive oil4tbsp extra light mayo (14cal per tbsp)
Directions
-Peel and dice potatoes and boil for 20minutes (should still be firm)
-finely slice leeks and cook in a pan with olive oil on a very low heat for 10minutes, until soft
-Drain potatoes and mix potatoes, leeks and mayo.
-Leave in fridge to cool or enjoy warm.
