5 eggs1 fresh vanilla pod, split lengthwise1 1/2 cup non fat milk1 tablespoon vanilla1 teaspoon ground nutmeg
Preheat oven to 300 F
In a large heatproof bowl, beat the eggs until smooth.
Pour the milk into a medium saucepan, Scrape out the inside of the vanilla pod and add the seedsand the pod to the milk.
Over low heat, heat the milk until small bubbles apear around the edge of teh pan. Do not let the milk boil.
Remove the podand slowly pour the hot milk over the eggs, stirring constantly.
Add the vanilla extract and nutmeg
Pour into ramekins
Sprinkle with nutmeg
Place the ramekins in a large baking pan and fill the pan with boiling water three-quarters up the sides of the ramekins
Bake 30 - 35 minutes
Allow to cool in pan 30 minutes
Refrigerat for 2 hours before serving

No I don't use sweetener however you can use a touch should you wish. Or go the other way and add a savoury flavour. It's a lovely custard base.
