Chicken Stir-Fry

1 lb boneless, skinless chicken breasts, cut into 1/2 X 2 inch strips1/2 bag broccoli slaw1/2 bag frozen onion and pepper mixture (or slice 1 onion and 1 pepper)low-sodium stir-fry sauce2 tbs peanut or canola oil
Heat a large skillet over medium-high heat. Add canola oil. When oil is hot but not smaking andd 1/2 of chicken strips and saute 1-2 minutes, stirring with wodden spatula until cooked on all sides.
Remove chicken, place on warm plate, repeat with rest of chicken. Cover plate with pot lid to keep warm.
Add pepper and onion mixture to pan. Stir-fry 3-4 minutes.
Add broccoli slaw, and saute until tender.
Add 1/4 cup stir-fry sauce, place chicken back into pan. Stir well to reheat chicken and to mix sauce.
Serving Size: 4 2-cup servings
