Healthy Pumpkin Muffins

1 Pkg yellow Cake MixI can of pumpkin (I use salt free organic) - NOT pumpkin pie mix! 1/2 cup applesauce1/4 cup of wheat germ1/4 cup of flaxseed meal1/2 cup oats1/2 cup of chopped Almonds1 tsp cinnamon1 TBS pumpkin pie spice
Preheat oven to 350
Mix all ingredients together. The mixture will be THICK!
Grease 2 12-cup muffin tins OR use liners.
Fill each cup slightly less than 1/2 full (you want to stretch the mixture to make enough for 24 muffins)
Bake at 350* for 20-25 minutes, until a knife inserted comes out dry.
Serving Size: makes 21-24 muffins
