Coq Au Vin

1 lb. boneless, skinless chicken breast3 cups fresh sliced mushrooms1/2 cup chopped onion2 cloves garlic chopped2 cups fresh chopped tomatoes3/4 cup red wine1/4 cup water1/4 tsp black pepper
1. preheat non stick skillet over med heat. cook chicken breads browning evenly, use low sodium chicken broth or water to keep from sticking. remove chicken from pan and set aside to cool.
2. Saute mushrooms, onions and garlic until tender.
3. Shred cooled chicken and add to mushroom mixture, add tomatoes, wine, water and pepper.
4. Cover and cook on low heat for 45 mins.
5. Uncover and cook on medium heat for 10-15 mins to thicken liquid.
6. Serve over Brown rice if desired. ( nutrition info does not include rice)
