Pan seared Polenta with simmered vegetable sauce

Ingredients
-Polenta-2 cups Bob's Mill Organic Polenta3 Tbs butter1/2 tsp Cumin, white pepper, red pepper flakes, garlic powder1 large zucchini or any squash2 yellow squash1 onion1 large pototoe1 bunch green onions2 cups tomatoe saucedash crush red pepper, black pepper, garlic powder, cumin1 Tbs fresh Italian parsley 1 tsp fresh tarragon
Directions
Turn heat to med, add olive oil to pan add onion and pototoes
cook 10 min
add all the remaining veggies and all other sauce ingredients
simmer with lid and start polenta instructions.

Follow polenta instructions and dashes of crushed rep pepper, white pepper, garlic powder, crushed corriander or whatever other spices you prefer. Mold polenta and slice into 8 slices. Pan sear with olive oil, serve with sauce onto. Enjoy.
