Apricot Turkey Burgers

Ingredients
1 lb. ground turkey (extra lean)1/2 cup celery (finely chopped)1/2 cup onion (finely chopped)1 egg1 cup plain dry oats3 Tbsp. apricot preserves2 Tbsp. yellow mustard1/2 tsp. dried parsley1/4 tsp. dried dill weed1/4 tsp. salt1/2 tsp. black pepper
Directions
1) Finely chop onion and celery.
*Feel free to add or substitute other vegetables like green peppers or even shredded carrot.
2) Line a cookie sheet with foil.
3) Preheat oven on Broil.
4) Combine all ingredients in a bowl. Make sure spices are mixed in evenly.
5) Form patties and place on foil lined cookie sheet.
* I use a 1/4 cup measure to portion and get 6 large patties.
6) Place cookie sheet in the oven 4-5 inches from the heat.
*Watch carefully. It is easy to burn food under a broiler.
7) Broil until browned on top (about 6 minutes).
8) Flip to brown the other side (about 6 minutes).
9) Remove from oven (Meat should have no pink left and an internal temperature of 165*F).
10) Serve plain, with ketchup/mustard/extra preserves, topped with your favorite burger fixings, or dressed up with teriyaki, soy, barbeque, or Thai peanut sauce.
