Chicken & Pasta Salad

Ingredients
1/2 C Broccoli, chopped1/4 C Celery, diced1/4 C Onion, diced2 Black Olives, diced1/4 C Tomatoes, diced2 oz Chicken Breast, broiled2 tsp Lemon Juice2 tsp Dijon Mustard1 tsp Olive Oil2 tsp Red Wine or Balsamic Vinegar1/4 tsp Black Pepper1/4 tsp Italian Seasoning1 oz Whole Wheat Pasta (2 oz cooked)Ice cubes
Directions
Cook pasta according to package, drain. Add ice to cooked pasta, toss and set aside to cool (or refrigerate).

Combine mustard, vinegar, lemon juice, italian seasoning, olive oil and pepper to make a dressing. Mix well.

Dice vegetables and toss with chicken, pasta and dressing.

(Can be refrigerated once mixed to make it colder)
