Ingredients

2 small eggplants2 tbsp tahini2tbsp lemon juice3 cloves garlicpinch of cuminsalt to tastepepper to taste2 tbsp oil - optional
makes 4-6 servings
1.spray a pan with pam olive oil spray
2. poke eggplant with fork several times
3. bake at 400 for 30-40 min or until soft turning once
4. peel eggplant - try peeling over food processor so you get the yummy juices
5. add garlic - 3 makes it have a bite
add tahini - 2tbsp might be too "peanuty" start with one and adjust to taste
add lemon juice, cumin, salt, and pepper
6. add 1tbsp olive oil if u think it needs it, I didn't
7. Refrigerate 2-3 hours before serving
8. Garnish with parsley and perhaps a drizzle of olive oil
* good on pita, pita chips, flat bread, toast, in a wrap or sammich!
