curry fish stew

Ingredients
1 medium onion, sliced1 medium green bell pepper, sliced1 medium red bell pepper, sliced2 cups chopped scallions2 cans diced stewed tomatoes2 tbsp chopped garlic5 - 4 oz tilapia filets (or any other hearty white fish), cut into bite sized pieces2 tbsp olive oilgaram masalayellow currysaltpepperlemon peppercayenne or red chiles (optional)
Directions
heat olive oil in medium sized stock pot on medium high
Add onions, peppers, scallions and saute for 5 mins
stir in chopped garlic
Add stewed tomatoes, stir for 1 minute
Add enough garam masala and yellow curry so it tastes the way you want it to.
stir in 2 cups of water...add more water if you want a thinner stew
Add salt and pepper to taste
bring mixture to a boil and then lower temp to medium low to simmer.
add pieces of tilapia and cover the pot
The heat of the stew will cook the fish.
When fish is cooked lower the temp further and let sit for at least 15 minutes.
Serve.
