Ingredients

    1 med. raw potato (diced - yukon works well)
    1 med. sweet onion (diced)
    2 TBSP olive oil
    2 cloves of garlic (chopped)
    1 lg. raw sweet potato (diced)
    2 cups fresh corn kernels or 1 can corn.
    1 14oz chicken broth
    1 14 oz unsweetened coconut milk (Lite works well)
    2 tsp curry powder
    1 tsp salt
    1/4 tsp pepper
    1 lb raw peeled shrimp

Directions

Saute onion and garlic in oil. Add curry powder, salt and pepper. Add diced raw potatoes, corn,broth, milk and cook till potatoes are tender. Add shrimp till they turn pink. Serve hot. Makes 8 servings. I think it tasts best the day after it is cooked - all ingredients blend well.
