Turkey & Black Bean Soup

Ingredients
1/4 lb. bacon, cut crosswise into 1/4 into strips1 onion, chopped1 tbsp chili powder1/2 teaspoon unsweetened cocoa powder1/4 tsp tabasco sauce2 tsp dried oregano2 tsp salt1/4 tsp ground black pepper2 cups crushed tomatoes in puree (15 oz. can)4 cups low-sodium chicken broth15 oz. can black beans8 oz. turkey, cut into 1/2 inch pieces10 oz spinach, cut into 1-inch strips4 servings

Directions:

Cook bacon until crisp. Drain. Cook onions in same pan until transparent, about 5 minutes. Add chili powder, cocoa, tabasco sauce, oregano, salt, pepper, tomatoes and broth. Bring to a boil. Reduce the heat and simmer for 15 minutes. Add the black beans and turkey to the pot. Simmer for 5 minutes. Cut the spinach into 1-inch strips. Stir in the spinach and bacon. Cook until the spinach just wilts, about 1 minute.
