1 cup cooked rice1 de-thawed Boca Grilled Vegetable burger1/4 cup cooked peas and carrots2 tsp taco seasoning2 tsp crushed red pepper flakesPepper to taste
Cook rice and frozen peas and carrots. If your Boca burger patty is still frozen, pop it in the microwave for one minute to de-thaw.
Heat a nonstick pan over medium heat (spray with a little 0-calorie cooking spray if necessary).
Crumble Boca burger in pan, letting it cook for a minute or so. Mix in cooked peas and carrots. Once heated, mix in rice, taco seasoning and crushed red pepper. Cook until heated thoroughly. Add pepper if desired.
Serving Size: Makes 1 large serving or two small servings
