Cornbread Salad

I box of Jiffy Cornbread Mix (baked according to pkg. directions)3 bunches of fresh broccoli chopped or broken up1 large head of cauliflower chopped or broken up12 oz. pkg. of Turkey Bacon cooked until crisp1 sm. red onion finely chopped1 3/4 c. light mayonnaise
Mix Cornbread according to pkg directions and bake in oven. Let cool. While cornbread is baking, cook turkey bacon. Drain on papertowel and let cool completely. In large bowl mix together the raw cauliflower, broccoli and chopped red onion. Once turkey bacon is cool, chop finely. (I use a food processor). Add it to your veggie mixture. When cornbread is completely cool, crumble it into bowl with bacon and veggies. Last is to fold in the mayo. Tastes better after it has sat in the refrigerator for awhile. Yum!
