Dragons' Breakfast Cassarole

1 large/Jumbo egg (can use egg beaters or egg whites)1/8 cup frozen spinach thawed and drained1/8 cup pork or beef sausage crumbled1/8 cup shreaded cheese (can also use feta)1/8 cup frozen hash brown potatoes
Preperation is fast.
preheat the oven to 350
Whisk egg, sausage,cheese, spinach and potato together.
coat a small oven/microwave safe cassarole with cooking spray.
pour the egg mixture into the prepared dish and cook for 30 min. in oven @ 350. Since ovens are different make sure it is done (egg should be set, not runny or wet)
serve immediately
