Eggless, Milkless, Butterless Spice Cake

Ingredients
2 1/2 cups all purpose flour2 tbsp cornstarch2 tsp baking soda3 tsp ground cinnamon2 tsp ground allspice1 tsp ground cloves1 tsp salt2 cups brown sugar2/3 cup vegetable oil2 tsp lemon juice2 tsp vanilla extract2 cups water
Directions
Preheat oven to 350ºF.

Whisk together the flour, cornstarch, baking soda, cinnamon, allspice, cloves and salt. Set aside.

In a separate bowl cream together brown sugar, oil, lemon juice and vanilla.

Stir the dry ingredients into the wet ingredients adding up to 2 cups of water to make a nice batter (1 cup usually works for me). Stir briskly with a fork.

Pour batter into a greased 8" cake pan and bake 45 minutes.

Serving Size: Makes 8 large slices (1 8" cake)

    nice cake since i do not lik eeggs, butter nor milk in mine. but your caloric count on top says a whopping (almost) 525 per slice??? Is that really so? - 8/15/11
