Lemon Roasted Potatoes

Ingredients
8 potatoes, washed and cubed1/2 cup lemon juice1/3 cup vegetable oil5 cloves garlic, unpeeled2 tsp salt2 tsp ground oregano1 tsp ground black pepper
Directions
Preheat oven to 400ºF.

Wash and cube potatoes.

Put all ingredients into a large ziploc bag and toss. Empty contents into a 9"x13" baking dish and bake for 1 hour.
