Squash Casserole

15 Large summer squash (washed and sliced)2 cups of sour creamRitz cracker about 45- 50 crackers (crushed)1- 10.75 can of cream of mushroom soup3- cups of Sharp cheddar cheese1 chopped onion 2- eggs
Boil squash for 10 minutes and drain water
In large bowl mix squash, sourcream, cream of mushroom soup,onion, 2 cups of cheese, and 30 (crushed) ritz crackers.
Mix well all ingredients together. Then add 2 eggs. Mix well again.
Pour into large casserole pan. Cook on 375 degrees for 35 mins. Then remove from oven add remain shredded cheese and crackers to the top of casserole. Place in oven and broil until lightly browned.
Serving Size: Makes about 35 1- cup servings (great for large gatherings)
