Lower fat Shredded Pork Tacos

Ingredients
1 lb boneless pork roast1 cup chopped onion1 16 oz can whole tomatoes, no salt added2, jalapeno peppers, seeded and chopped1/2 tsp salt1/2 tsp black pepper12 low fat mission tortillas, soft taco size1 cup shredded lettuce1 cup Kraft Mexican Style 4 Cheese Blend1/2 cup low fat sour cream3/4 cup guacamole (not in calculator, see note)
Directions
Combine first 6 ingredients together in a large sauce pan; fill with enough water to cover the roast. Simmer on low heat for about 2 hours, or until meat is fork tender. Remove meat and strain veggies. Shred meat with a fork, and place back in pan with the veggies and a little bit of cooking liquid to reheat just before serving.

For each serving, place approx 1 oz of meat and veggie mix, a little lettuce, cheese, sour cream, and guacamole (opt) in a tortilla. Enjoy!
